So, I wanted to bake something quick the other day when my friend was coming over to watch some anime. I wasn't in the mood for cookies, or too much chocolate. I did, however, have an overripe banana and some peanut butter that I'd bought specifically so I could bake with it. And I was feeling creative! So, this is what I concocted!
I've never made blondies before - I'm basically using the name here to denote a brownie that isn't, um, brown. Which is the point, right?
I started conceptually with a brownie recipe that I am familiar with, and went from there. I suspect you probably don't really *need* two eggs for this, but I kept them both for the sake of texture. I also suspect you could cut back on the butter without any trouble, to 1/3 or 1/4 of a cup. That said, they came out exactly as I was hoping this time! I took them i to school and they were gone in, like, half an hour.
Anyway!
2 eggs, beaten until frothy
add 3/4 C sugar
1 C flour
1/2 C butter or margarine, softened
1 over ripe banana
1/2 C peanut butter
~1C chocolate chips
Spread into greased 8x8 or 9x9 square pan. Bake ~370 for around 30 min, turning once, until the pass the knife test. These came out pretty much exactly as I was hoping. The blondie itself has a good peanut butter and banana flavour, like a PB&B sandwich, and the chocolate chips compliment very nicely. The texture is nice and dense, like a brownie. I recommend for anyone who wants a quick snack and likes these flavours :D

My variation:
1 egg
1/2 C sugar
1/2 C margarine
1 banana (mashed)
1/2 C PB
slivered almonds and sunflower seeds (or any other nuts)
Follow the above directions!
Thanks so much for a wonderful breakfast treat!
They sound delicious! I'm going to purposefully let some of these bananas go "bad" and try this with Splenda, rather than sugar, so my Daddy-o can eat them, too.
Oh, look, a bunny!
