S’More Cookie Bars

These were a HUGE hit.





Recipe:

Ingredients:

1/2 cup butter, room temperature
1/4 cup brown sugar
1/2 cup sugar
1 large egg
1 tsp vanilla extract
1 1/3 cups all purpose flour
3/4 cup graham cracker crumbs
1 tsp baking powder
1/4 tsp salt
2 king-sized milk chocolate bars (e.g. Hershey’s)
1 1/2 cups marshmallow creme/fluff (not melted marshmallows)

Directions:

Preheat oven to 350°F. Grease an 8-inch square baking pan. In a large bowl, cream together butter and sugar until light. Beat in egg and vanilla. In a small bowl, whisk together flour, graham cracker crumbs, baking powder and salt. Add to butter mixture and mix at a low speed until combined. Divide dough in half and press half of dough into an even layer on the bottom of the prepared pan. Place chocolate bars over dough. 2 king-sized Hershey’s bars should fit perfectly side by side, but break the chocolate (if necessary) to get it to fit in a single layer no more than 1/4 inch thick. Spread chocolate with marshmallow creme or fluff. Place remaining dough in a single layer on top of the fluff (most easily achieved by flattening the dough into small shingles and laying them together). Bake for 30 to 35 minutes, until lightly browned. Cool completely before cutting into bars.

Makes 16 cookie bars.

[EDIT] I came up with a few replacement suggestions for those who don't have all the ingredients available to make this recipe:

Marshmallow fluff: Try this.

Graham cracker crumbs: Check out these links: 1 2 3

Hershey's king size bars: You can simply buy normal-sized (or pretty much any size) chocolate bars and break the chocolate, laying each piece side by side and taking up the space in the pan. You don't need king size bars or "Hershey's" to make this recipe.

theyylook great- brings back memories of campfire s'mores. can anyone tell me if/where i can find marshmallow creme/fluff and graham crackers in Australia? I have never seen any of either for sale anywhere (although i have never looked specifically for them). I always figured they were more of an American thing. thanks

I'm not sure where you could find them in Australia, but I'm thinking you could probably order the ingredients from the U.S. and have them shipped to you? Trust me, it's worth it.

Do you think if you melted marshmallows with a little butter, you could come up with the creme consistency? I have 3 bags of marshmallows to use up :)

I'm not sure if it'd have the same result, but you could try anyway. If you need a substitution for the marshmallow fluff, check this out!

Just a question about the cracker crumbs.
To my knowledge, graham crackers arn't available in Australia, where I'm located. Is there any substitute for it?

My Aussie husband (he now lives in the U.S. with me... :) ) says that the plain oval Arnott's biscuits should give you the same taste. I've had those. They're a little less crumbly, but they taste pretty close.
