Parmesan Crusted Chicken

Hands down the easiest chicken dish...ever. Okay maybe not ever but it's pretty darn close. 5 ingredients (not counting the seasonings of course) and 40minutes to make, and 30 of those minutes you wouldn't even be doing anything!





First, you need your chicken pieces

I'm using chicken thighs because i hate chicken breasts. but hey, seriously though, use whatever rocks your boat.





preheat the oven to 350°F/180°C

in a small bowl, add 2 tablespoons of olive oil and 1 tablespoon of minced garlic (about 1 1/2 clove)






in another bowl, add 1/3 cup breadcrumbs (i used panko) and 1/4 cup freshly grated parmesan. seasoning-wise, go crazy.
here, i added 1 teaspoon dried basil, 1 teaspoon seasoned salt and lots&lots of black pepper

*this recipe is for 2 chicken pieces, multiply/divide the quantities if you're using more/less*





wash your chicken thoroughly and pat dry with paper towels

dunk your chicken into the oil&garlic mixture, coating well.






transfer it to the bowl with the crumbs&parmesan quickly and coat evenly, making sure every part of the chicken is covered.





line a baking dish with foil (easier clean-up!)

put the chicken in the baking dish (skin side up) and cover the top of it with the remaining crumb&parmesan mixture
(if there's any left, but there usually is).






bake in the oven for 30mins





after 30mins






would you look at the melted cheese!

at this point your kitchen should smell so good.





well, eat it!

i served mine with a simple pasta salad

previously i used a different recipe that required a lot more ingredients and it was pan fried, so this is definitely the easier (and tastier!) of the 2 :D

yikes it was a strictly "lets see what we have in the fridge" affair! i cut up some bell peppers, carrots & chillis and put them in a baking pan with some olive oil and seasonings. i then put the pan in the oven (the same one as the chicken in fact & for about the same time too) and when they're done i tossed them with some elbow pasta... the dressing is the juices left over from the pan, a mixture of olive oil & the drippings from the vegetables.

in a nutshell, i totally winged it! lol :)

YUM! I made this last night and seriously believe that it is the best chicken parmesan I've ever had. The only variations I did on the recipe was using parmesan-from-a-can (Walmart brand at that... groceries are expensive!), regular bread crumbs, and chicken breast. SO GOOD!!
