Strawberry Cupcakes with Kiwi Frosting.

To celebrate this wonderful day in New England where it got up to 84 degrees out in April I decided a couple of days ago to make strawberry cupcakes with a kiwi frosting. Now I winged it when it came to the frosting but I did my best to keep the measurements written down but the cupcakes came out amazing and the frosting was just superb. Perfect cupcake for this type of weather, summery. More pictures and the recipe after the cut.


















Strawberry Cupcakes (NOTE: they were not overpowered with strawberry flavor, but they were moist.)
Makes 12 cupcakes:


2 1/2 Cups Flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 stick of butter, softened
1 cup sugar
3 large eggs
1 teaspoon vanilla extract
1 cup strawberry yogurt

Preheat oven to 350 degrees. Blend butter and sugar together then stir in each egg one at a time. Then add flour, baking soda, baking powder, salt and vanilla extract. Mix well. Then add yogurt. Mix thoroughly.

Place 1/4 cup portions into cupcake pan (inside paper or greased) and bake for about 15-20 minutes or until spongy to the touch.

Kiwi Buttercream Frosting:

3 cups confectionery sugar
1 stick of butter, softened
1/2 cup of kiwi puree or just plain old mashed up kiwis (that's what I used)
some vanilla extract to flavor

Cream the butter and sugar together, then add the kiwi, mix well. add vanilla at your own disgression.

It's funny my cousin hates kiwi but I had her try it, and she fell in love with the frosting. Ha.

It was actually pretty prominent. It went well with the subtle strawberry flavor of the cupcake if the cupcake had more strawberry flavor it would have been overpowering but it was just right. :)

these looked so amazing I had to try and make them for a friend's birthday x3
they turned out quite ok, considering that was the first time I made cupcakes...

but I've got one question...
exactly how much is a stick of butter?
I really wasn't sure about that, as I'm not from the US and used to that measurement ^^'
and as my frosting turned out not as beautiful and white as yours I just had to ask.

I've used this recipe many times to make a very delicious cake. Instead of cupcakes, I made two 8 inch layer cakes and substituted banana yogurt for strawberry and orange juice and zest for vanilla in the cake. It was awesome! The icing is genius! Thank you for the great recipe.

If I don't want to use yogurt can I use fresh strawberries and sour cream? I don't have any yogurt on hand, lol.

I copied your recipe but for the icing I put in a tiny bit of lemon extract instead of vanilla. It tasted brilliant! The whole cupcake was so fruity :):) thanks for this wonderful idea!
