15-minute Flourless Peanut Butter Cookies

The blame for these cookies being a constant presence in my home is placed on my cousin, who texted me the recipe a few weeks ago. I made them quickly while I cooked dinner, and several more double batches pop up every week. We're obsessed! They're also safe for my gluten-free and dairy-free friends. A rare win for all our allergies.

And did I mention they're done in less than 15 minutes, from start to finish?

Ingredients:
1 cup peanut butter
1 egg
1 tsp baking soda
1/2 cup brown sugar
1/2 cup white sugar
1/2 tsp vanilla
1 1/2 cups chocolate chips
Directions:
Pre-heat oven to 350. Line a baking tray with parchment. (Or don't. It's not the end of the world).
Mix all ingredients well. Roll up 1-2 tablespoons of dough into a ball, place on tray, and press down gently with a fork.
Bake for 10-13 minutes.
Eat. Eat them all. NOW.

Do you use 'conventional' peanut butter, the sort with sugar and stabilizers added--like Jif or Skippy--or the 'all natural' sort made with just peanuts and salt that has an oil layer that you have to stir in when you first open it?

I use the natural kind (I'm allergic to the other), but I have friends who've made it with the processed type and it turned out just as delicious.

This looks amazing!! Would it affect the whole recipe if I held off on the chocochips tho? I love love love peanut butter cookies, but quite impartial when it comes to anything chocolate....I know....don't judge me lol

Part of me marvels at how the dough made it into the oven at all....I think I might just mush it into vanilla ice cream.

I just made these...seriously saw this and instantly went in the kitchen to make them. Used regular peanut butter not the all natural kind and they came out fantastic! I see these popping up a lot more around my house :p. Thanks for the recipe!

Do you cream the sugar together with the peanut butter to start or just throw everything in a bowl and go for it?

I've got a tray of these cooling now--can't wait to try them! Is the dough supposed to have the texture of cookie crumbs? I had to really squeeze it to get it to hold together at all. It took me 15 minutes just to turn the dough into something resembling cookies. I did use chunky peanut butter instead of smooth, but I'd seen in a similar recipe that it was okay to substitute...

That said, they came out beautifully, so I guess I did it right!

Considering that flour and I have a hate/hate relationship in baking, this will be the perfect recipe to use! And ahoy, I just bought a new jar of peanut butter! ;)
