Homemade Poptarts

Dough Ingredients:
- 3 CUPS Flour
- 1/2 TSP. Salt
- 3/4 CUP Oil
- 2 TSP. Vinegar
- 5 to 6 TBSP. Cold Water

01. In a small bowl, stir flour and salt.
02. Combine oil, vinegar and water in a separate bowl.
03. Mix dry and wet ingredients, form into bowl, and chilld for 15 minutes.

Once you've completed the dough, roll it out to half centimeter thickness, and cut
into identical rectangles. You'll need two rectangles per poptart.

I put a dollop of Smuckers Sugarfree Strawberry Jam in some, and Smuckers
Sugarfree Chocolate Topping in others! (I live in Canada and was unable to find these
anywhere - my good sport of a boyfriend brought them to me from the states.)

Spread evenly on the center, leaving a border of plain dough. Top with second dough
rectangle and seal all edges with the end of a fork. Place on a sprayed baking sheet
and bake for 10 minutes, or until golden brown.

Once they've cooled completely, I coat them in a Splenda glaze which is simply 1 CUP
of Splenda and one to two tablespoons of milk. I add sprinkles but you could, of course,
opt to leave those out.

These are super flaky and not overly sweet - SO good! Hope you enjoy them.

I used 1 cup of Splenda with 2 tablespoons of milk for the glaze. (:

I'm Diabetic and love sweets, but I'm always very cautious because of the sugar content in many things. these look amazing! I wrote the recipe down and will try it. and also thanks for answering about the icing, was gonna ask the same thing.

Glad this was on the front page of live journal. Looks good. Hope you don't mind I'm planing on using real sugar. I know the diabetic problem and completely sympathize but I try to steer clear of fake sugar. Don't know why exactly just like my food as real as possible. That being said I'm sure my version will still have a lot less sugar because I'll only lightly ice them, and the filling will be sugar free since I make low sugar or sugar free jams.

I tried this out! The result was tasty, though I had a couple of troubles.

First, am I just blind, or isn't there the heat of the oven anywhere? ^_^; As I noticed this only when I had the dough all ready, I just guessed and threw them in 175C (about 314F, I think), but that must've been too low, since they took half an hour to bake. So could you edit the heat in? :)

Second, I had trouble with the amount of the liquid. After I added the amount in the recipe, the dough was still very...flour'y. Had to add about a double or even more to get it into a moldable dough.

The latter might be my own fault, though. I live in Finland, and we don't use cups, but litres, so I had to convert it all. Might've made a mistake there. :D
