Potato Rosemary Bread

I'm exhausted!!! It's been one of those days- you guys know the ones: where you get up not expecting to do much of anything, but then somewhere along the line you decide to do everything you weren't planning on doing? Yeah, I'm having one of those days. But aside from that, I was planning on making bread today, so at least that wasn't a surprise. Especially since this one involves making a biga starter the night before. 
It's my summer/fall mission to try every recipe in The Baker's Apprentice. So far, I've done about 4 recipes, I think. Which is pretty good, considering how lazy I am. This one just may be my favourite so far (maybe on par with the English muffins). An amazing mashed potato is crucial to this bread- cause, come on, you gotta work with the best, right? The taste definitely comes through, giving the bread a depth of savoury flavour, heightened by the rosemary. It may be a bit of a journey to make, but it's well worth it, trust me!
