Buy lemon cake mix and mix it up according to package directions. Get a hand held lemon pie and cut it into pieces small enough to fit in the bottom of a cupcake tin. Put a little cake mix on the bottom of each cupcake form, press the piece of pie into it and fill the rest of the cupcake form with cake mix. Bake according to package directions. Voila!

You can use any kind of cake mix and any kind of handheld pie. Or, you can use regular pie, except you have to do more cutting. The German chocolate cake/cherry pie with coconut frosting is particularly good, but don't get on the scale afterwards.
