Chocolate Peppermint Fudge

We've made this recipe a couple times, though my husband is often the one who makes it. It's a delicious fudge that's smooth and flavorful. I took some of this batch to work, and got several compliments on it. It's also pretty easy to make if you're afraid of other kinds of candy making. The recipe and method are under the cut.




Ingredients:

2 cups milk chocolate chips
1 cup semi-sweet chocolate chips
1, 14 ounce can Sweetened Condensed Milk
Dash salt (use table salt, not kosher or sea salt...the chocolate doesn't get hot enough to melt more course varieties, and it ends up clumping together instead of distributing throughout the fudge).
1/2 teaspoon peppermint extract
1/4 cup crushed hard peppermint candy

Method:

In a heavy saucepan, over low heat, melt the chips with the sweetened condensed milk and salt. Remove the mixture from the heat; stir in peppermint extract. Spread evenly into a waxed paper-lined 8 or 9 inch square pan (if you like spray cooking spray into the pan and on the waxed paper for easy removal). Sprinkle with peppermint candy.

Chill 2 hours or until firm. Turn the fudge onto a cutting board; peel off waxed paper and cut fudge into squares. Store covered in refridgerator (though if you're taking it somewhere, as long as it's not too warm it should hold up pretty well...it survived a 9-hour work day for me; at least what little was left of it).

Again, this fudge is very smooth and creamy, and easy to make. It's well worth trying!
