This is the first time I have posted in this community and the stuff I bake isn't half as good as some of the stuff I have seen in the community so far, but I have started to really get in to baking and I am hoping to get tips / ideas from you guys.
I don't get to bake as often as I would like because stupid work gets in the way, but when I do get to spend some time in the kitchen, I like to bake new things.
It is my Birthday on Thursday this week and at work we do this thing, where when it is your Birthday you bring in cakes to celebrate. Most people usually buy the cakes, but I like to use this as a reason to bake something, hopefully, yummy! I tend to do most of my baking for work anyway. I have found my work colleagues are the best guinea pigs and they can be very honest about whether they like something or not lol.
I decided to bake this morning chocolate chip cookies. I know, I know, this isn't very creative or difficult, but I am more of a cake baker, and not great at biscuits/cookies. So, I thought I would try today to master the chocolate chip cookie! They look ok and my Mum says the cookie I let her try tasted like a cookie, so that's a good start lol. But at the end of the day, this is my Mum and she would probably only say nice things lol. So the true test will be my work buddies tomorrow. Fingers crossed they like them! If they do, I will make sure my next biscuit will be a bit more of a challenge!! I need to use the lovely biscuit cutters my BFF bought me for Christmas.
After making my cookies, I then went back to what I'm used to making, the good ol' cupcake!! I love cupcakes, the soft sponge and the butter cream icing on top is always soooooo yummy! I also love decorating them. You can make them look so inviting with simple decoration. I decided to make lemon cupcakes this morning. I thought it would be nice and refreshing and not too sweet as the cookies would be quite sweet. I also used a summery decoration (flowers / butterflies) as even though it is Feb in England, it is actually a lovely sunny day and it is meant to be a sunny week this week, so I thought I would celebrate finally seeing the sunshine after sooooooooooo long of snow / rain and darkness with some bright decorations!
I know everyone will have a recipe for the chocolate chip cookie, but if anyone is interested to know a recipe for the Lemon Cupcake, let me know. But I'm sure you can all guess how it's made haha.
Like I said, I know my stuff isn't half as amazing what is posted on here, but I am new and learning!!

Know something that's really tasty in chocolate chip cookies and nobody expects it? Cinnamon. When I make chocolate chip cookies (pretty much the only cookie I bake most years) I use the best semisweet/bittersweet chips I can afford with a high cacao content, and then add some cinnamon and a dash of cloves. People go crazy trying to figure out what makes them so good, but it's ridiculously simple. I don't dare go to a party at my next-door neighbors' house without at least a triple batch. If I don't bring that many, I won't get one at all!
Chocolate chip cookies are one of those things that seem really easy but actually have several challenging aspects (OK, I'm talking about me).
For instance, mine always come out crunchy/oddly shaped and I want them to be squishy and thick and uniform. Not crunchy and thin and weird.
They just never quite come out the way I want.
Chocolate chip cookies I don't seem to have issues with. But I'm the idiot who can't make rice crispy squares.
I think your decorations are beautiful.
And Happy (early) Birthday to you!
And yay for birthdays!! My birthday is on Sunday! Go Pisces!

I don't get to bake too often anymore either.
Since I've been pregnant with my daughter, I'm afraid cakes, cupcakes, etc are what make me sick this time around XD;
But those really do look awesome!
