Homemade Pizza Pockets/Calzones

My boyfriend LOVES pizza pops, but I think they are disgusting. So I made up my own recipe which he likes much better than those evil little pockets.
I started with a basic pizza dough:
Approx. 2 cups flour
1 pkg (1/4oz) quick rise yeast
1 tsp salt
1/2 tsp sugar
3/4 cup warm water
Combine 1 cup flour and dry ingredients. Add water, beat until blended. Stir in enough remaining flour to form a soft dough. Knead 6-8 min. Place in a greased bowl, turning once to coat. Let rise until doubled (approx 1 hour). Then punch it down and divide into 4 balls. Roll each ball into a circle and add the filling.

For the filling, I fried some hot italian sausage and onions together until the sausage was almost cooked. Then I added a bunch of sliced mushrooms, garlic and zucchini. When that was cooked I put in a bit of leftover pizza sauce, a chopped tomato and chopped roasted red peppers. You could also put some cheese in them, but they don't really need it.

After folding them over and pinching the sides together, I brushed them with an egg wash and sprinkled some sesame seeds over it for decoration (and because I had a huge bag of sesame seeds to use up).

I baked them at 400 degrees until golden brown, about 15-20 minutes.
