Cheddar Baked Chicken

More pictures and the recipe at my blog: Happy Life, Happy Wife

  • 1/4 cup butter, melted
  • 1/2 cup AP flour
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1 egg
  • 1 tbsp milk
  • 1 cup shredded mild cheddar cheese
  • 1 pouch Shake n Bake Extra Crispy
  • 1 cup Rice Krispies
  • 2-3 boneless, skinless chicken breasts, cut in half

  1. Preheat the oven to 350 degrees F.  Pour your melted butter to coat the baking dish.
  2. Mix the flour, salt, pepper, and garlic powder in a bowl.
  3. In another bowl, whisk together the  egg and milk.
  4. In a third bowl, combine the cheese, bread crumbs, and cereal.
  5. Keep your bowls in that order and work down the line.  First, dredge your chicken in the flour mixture, dip in the eggs, then press it in the bread crumb mixture to coat.  Really push the chicken down in the bread crumbs.  Transfer to your baking dish.
  6. Bake for 35 minutes or until coating is golden brown and chicken is done.  (35 minutes was just a tidge too long in my oven, so keep an eye on it)

I made this with drumsticks because that's what I had on hand... took a bit longer to cook but delicious!

I made this with chicken tender strips instead of cutting chicken breasts in half. It was amazing. Only had to cook 30 min. I also cooked it in a stoneware dish. If I could make this every night I would be happy. Tastes good re-heated as well! Thanks so much for this recipe.

Where does it come in as I can't see it in the recipe (maybe I'm just tired!)

This was good! Easy to prep, easy to clean up after. I did cut the salt down though.!/photo.php?fbid=10152095058790062&set=a.305580070061.331941.693845061&type=1&theater¬if_t=like

I don't see bread crumbs on the ingredient list. Where does the shake and bake come in? Thank you

The shake and bake is the bread crumbs! So, I am assuming if you don't have actually shake and bake you could use regular bread crumbs.
