Cookie Monster Cupcakes

If you guys are on deviantART or follow LiveJournal on Facebook, you may have seen these already. These guys went a little spastic over there and ended up getting a crazy amount of views in a few places around the net. Since when does that ever happen to me? Hah. Usually the stuff I post doesn't get seen my many people until I show you guys, so this is a little weird! So apologies if this is a bit repetitive for some of you.
These cupcakes were a commission from my sister for a friend of hers who was having a PJ party for her birthday. Because no one is too old to enjoy the Cookie Monster!
There are a thousand versions of this guy in cupcake form. These are mine.
Whichever way you go, it's not that difficult to make. This way does require a love for a lot of icing, however. I was assured by sister that this would not be a problem for her choice of recipients. The cupcakes are domed and then topped with an ice cream scoop of blue buttercream icing. I then roll it in coconut (dyed various shades of blue to give a 'fuzzy' look) and top it with cool mints for eyes.

These are more old-school cookie monster, rather than the lighter blue of the more recent version. I've seen a lot of people use white chocolate melts for the eyes, but I use kool mints. I don't like cakes to have a 'front', so this looks effective from all angles. Bonus feature: after having such an enormous amount of icing, the kool mints are also great at cleansing the palate.

Sister said she needed 10, so I made a dozen just in case.

The cupcakes themselves are chocolate. Of course. Always a crowd-pleaser. I've made these before using almond cakes with an almond buttercream. The fin thing about these guys is you can make them any flavour combination you like, as long as you cover him in blue!
